Pathogenic bacterial growth
Milk is normally pasteurized or heat-treated in some form to reduce possible pathogens. Unpasteurized raw milk can contain dangerous bacteria, responsible for many food-borne illnesses. Even healthy animals can carry germs that can contaminate milk. Milk can become contaminated with bacteria during the milk collection process. A small number of bacteria can multiply and grow in milk before anyone drinks it if it’s raw. Dairy methods have improved over the years, but they still don’t replace pasteurization to ensure that milk is safe to drink. Raw milk supplied by “certified”, “organic” or “local” dairies has no guarantee of safety.
Reduction of milk pathogens
Milk pathogens are mainly the result of poor hygiene, animal stress and animal diseases. Camels must be clean and healthy. It is recommended that camel milk be regularly tested for pathogens and that test records be made available to consumers on request.
Following good hygiene practices during milking can reduce, but not eliminate, the risk of milk contamination. The dairy farm environment is a reservoir of pathogens. Whatever precautions farmers take, and even if their raw milk tests are negative, we can’t guarantee that their milk, or products made from it, are free from harmful germs.
Germs such as Escherichia coli O157, Campylobacter and Salmonella can contaminate milk during the milking process of dairy animals, including cows, camels and goats. Animals carrying these germs are generally in good health.
